Simple changes



I've made some simple changes in our eating habits at home. We have gotten away from having a rich sweet dessert like ice cream or pie at the end of every meal. For awhile, I was eating ice cream every day- sometimes on the same day that I would have pie or cake. Now, our dessert is fresh fruit. A nice juicy sweet red apple is a wonderful thing served ice cold on a hot Florida day.

In cooking, I have made a conscious effort to cook with more fresh vegetables, instead of relying on a meat-based diet. I made a wonderful chicken stir-fry by adapting a dish I saw on Rachael Ray's show on hosting sweet 16 parties. It was a lettuce wrap dish, but I put in fresh shredded cabbage, and made a larger portion. That pot of food fed my husband and myself for days!!

The efforts are paying off- my stomach is flatter and I feel more energized. I don't fall alseep in front of the TV any more.
